Sharp Cheddar & Apple Scones
2 cups flour
1 tablespoon baking powder
1 teaspoon salt
2 tablespoons sugar
1 cup sharp, white, cheddar cheese
6 tablespoons cold butter, sliced
3/4 cup shredded apple
flour for dusting
1 egg yolk
1 tablespoon milk
sugar for dusting
Directions & Notes
In the bowl of a food processor, pulse together flour, baking powder, salt, sugar, and cheese until just mixed. Add butter one tablespoon at a time and pulse until just incorporated after each addition. Add apples and pulse until apples are incorporated and dough has formed a ball.
Remove dough from food processor and place on a lightly floured board. Gently form dough into a 1 1/2 inch tall disk about 6 inches across. Flour the disk on all sides by flipping it once or twice.
Cut dough into eight even triangles by slicing dough in half repeatedly. Place triangles on a baking sheet.
In a small bowl, whisk up egg yolk and milk. Brush the tops of each triangle with milk mixture and sprinkle the tops with sugar.
Bake in preheated oven for 20 minutes until golden brown on top. Serve warm.
