Faux Bellini
The most elegant and lovely drink I know is the Bellini.  I adore them in the summer time when the peaches are perfectly ripe.  For the under-twenty one set, I created this Faux Bellini so they can sip in style.  It’s also a great mocktail for pregnant ladies and nursing mothers.  Try it next time the peaches are ripe and pretend you are in Italy. 

3 extremely ripe peaches
sugar
water
Sparkling Cider

Peel and pit the peaches and throw them in the blender.  Blend until completely smooth. The peach mixture should be thick, but pour-able.  If peaches are too thick, add a splash of water to thin out. If they are not sweet enough, add a little sugar to the blender.  In the bottom of a champagne glass, pour one ounce of peach puree.  Top the glass with cider and a sliver of fresh peach.
